This recipe is from FAVOURITE CAKES by Jane Suthering. They still sell it on AMAZON. Page 16, the cake is very dense and it doesn't rise much. Use any type of chocolate between milk to 65% because if you go any higher the cake would taste of the cocoa powder and sugar. I tried using a 80% chocolate and even my mum (who doesn't like things too sweet) said she would prefer it to be sweeter
- 175 g Plain Flour
- 2 tbsp Cocoa Powder(I used HERSHEY'S but you can use an type just not drinking chocolate:P)
- 1 tsp Baking Powder
- 1/2 tsp Bicarbonate of Soda
- 150 g Light Brown Soft Sugar
- 2 tbsp Golden Syrup ( I only had honey so I used honey and I think its perfectly fine)
- 150 ml Sunflower oil or any type that doesn't affect the flavor
-150 g Natural Yogurt
- 2 eggs
50 g Plain Chocolate ( The recipe said to only grate it but I melted mine and still seemed fine)
Instructions:
1) Pre-heat the oven to 170 c.
2) Grease and flour one 22cm sandwich tin
3) Sift in all the dry ingredients - flour, cocoa powder, bi-carb and sugar. Mix them all together.
4) Add the wet ingredients - g. syrup, oil, yogurt, eggs and the chocolate (melted/ grated)
5) Pour the mixture into the prepared tin and bake for 30 mins or until the cake has risen and is firm in the middle. You can also insert a toothpick to check if it is clean. Cool on a wire rack.
The cake is great on its own but a little frosting can do no harm!!
Ingredients for Frosting:
- 175 g plain chocolate, melted
- 175 g unsalted butter, room temperature
- 175 g icing sugar, sifted
Instructions:
1) Cream the butter in a mixing bowl
2) Add the sugar and mix until pale yellow
3) Mix in the melted chocolate.
4) Frost the cake and if you are very skillful, cut the cake in half and frost the center too !!
Tips:
- Melt the chocolate in a water bath ( Boil water in a pot and place a mixing bowl or something that is large enough to cover the top of the pot and not touch the water. Melt the chocolate in even sizes NOT AS ONE WHOLE BLOCK !!!)
